About The Position

Cooke is a global seafood company with operations in North America, Europe, South America and Australia. True North Salmon, part of Cooke, is a recognized leader in premium seafood production, known for quality, sustainability, and innovation. We are seeking an experienced and results-driven Director of Processing to lead our processing operations and play a key role in delivering world-class products to global markets. As Director of Processing, you will take full ownership of plant operations, leading teams, optimizing performance, and ensuring the highest standards in safety, quality, and efficiency. This is a senior leadership role with direct impact on operational performance, cost management, and continuous improvement initiatives.

Requirements

  • 10+ years of leadership experience in fish processing.
  • Strong background in plant operations, yield optimization, and cost control.
  • Proven ability to lead large teams and drive measurable results.
  • Expertise in food safety systems (HACCP, CFIA, SQF, BRC).
  • Experience with Lean Manufacturing and continuous improvement.
  • Strong analytical, leadership, and communication skills.

Responsibilities

  • Oversee all processing activities including receiving, grading, filleting, portioning, freezing, packing, and shipping.
  • Drive production planning and execution to meet demand while maximizing throughput.
  • Monitor performance and implement improvements to increase efficiency and output.
  • Champion Lean Manufacturing and continuous improvement initiatives.
  • Optimize yield, reduce waste, and improve labour productivity.
  • Partner with Maintenance to ensure equipment reliability and uptime.
  • Maintain compliance with HACCP, CFIA, SQF, BRC, and other regulatory standards.
  • Lead resolution of quality or food safety issues with strong corrective actions.
  • Promote a culture of quality and food safety across all teams.
  • Lead, coach, and develop managers, supervisors, and production teams.
  • Foster a culture of accountability, collaboration, and continuous improvement.
  • Support recruitment, training, and succession planning.
  • Oversee budgets and control labour, materials, and overhead costs.
  • Identify and execute cost-saving initiatives without compromising quality.
  • Analyze operational data to improve profitability and performance.
  • Lead safety programs and ensure compliance with all health and safety regulations.
  • Promote a proactive, prevention-focused safety culture.
