About The Position

The Lead Line Cook at Dacotah Dining will competently utilize all kitchen stations, assume a leadership role in the kitchen, and assist the Chef de Cuisine. This role is responsible for all food produced by the kitchen, assisting with food and labor cost control, and providing training and guidance to kitchen staff. The Lead Line Cook will also motivate kitchen staff, ensure they remain productive, and maintain the cleanliness and sanitation of the kitchen area. This is a full-time position with a salary range of $23.50 - $46.76 per hour, working afternoon, evening, late night shifts, and weekends.

Requirements

  • Prior line cook experience at a full-service restaurant preferred.
  • Minimum of two years in a leadership role.
  • Strong culinary, knife and cooking station skills.
  • Strong leadership and communication skills.
  • Strong organizational and teamwork skills.
  • Knowledge of frying, sautéing, broiling, basting, baking, poaching and roasting.
  • Knowledge of proper sanitization techniques.
  • Able to produce consistently high-quality food products.
  • Able to cook steaks to temperature.
  • Self-motivated and dependable.
  • Sensitivity to various cultures, including Native American cultures.
  • Regular attendance and punctuality.
  • Able and willing to work any changes in scheduled hours as required.
  • Serve as a credit to Jackpot Junction Casino Hotel, and encourage others to do the same.
  • Mobility throughout the facility.
  • High level of physical endurance.
  • Good coordination and awareness.
  • Able to stand for extended periods of time.
  • Able to twist, bend and squat frequently.
  • Able to lift up to 50 pounds frequently.
  • Able to tolerate heat and congestion in kitchen.

Responsibilities

  • Competently utilize all Dacotah Dining kitchen stations.
  • Work any station and shift as needed.
  • Assume a leadership role in the kitchen.
  • Assist Chef de Cuisine as needed.
  • Assume responsibility for all food produced by the kitchen.
  • Assist with control of food and labor costs.
  • Provide training and guidance to kitchen staff.
  • Motivate kitchen staff and ensure that they are kept busy.
  • Maintain cleanliness and sanitation of kitchen area.
  • Perform other duties and responsibilities as assigned.
