About The Position

The Overnight Steward at Kalia Theater is responsible for maintaining cleanliness, sanitation, and organization throughout food and beverage areas during overnight operations. The role supports kitchen and banquet operations by cleaning, sanitizing, and storing china, glassware, silverware, cookware, equipment, and work areas according to company and health department standards. The Overnight Steward prepares food and beverage areas for the next day while maintaining a safe and productive work environment.

The position involves operating dishwashing equipment; cleaning and sanitizing food preparation and service areas; performing heavy-duty cleaning of kitchen equipment and spaces; maintaining floors and waste disposal areas; organizing stewarding supplies; and assisting with buffet, banquet, and special-event setup and breakdown. The associate reports maintenance concerns and hazards, follows food safety and chemical-handling procedures, and works cooperatively with culinary, banquet, restaurant, and other teams. Regular attendance, compliance with company policies and grooming standards, and other assigned duties are also expected.

Requirements

• High school diploma or equivalent.
• Knowledge of sanitation standards and cleaning chemicals.
• Ability to work independently and efficiently during overnight hours.
• Ability to communicate effectively with team members and management.
• Strong attention to detail and commitment to cleanliness and safety standards.
• Ability to stand for the entire shift and for extended periods.
• Ability to withstand temperature variations, including hot and cold conditions.
• Ability to lift, push, pull, carry, and otherwise move heavy objects: exert up to 100 pounds of force occasionally, 50 pounds frequently, and 20 pounds constantly.
• Flexible and long hours may sometimes be required.

• Previous stewarding, dishwashing, or kitchen utility experience.

Responsibilities

• Maintain cleanliness and sanitation in kitchens, stewarding areas, loading docks, storage rooms, and food and beverage back-of-house areas.
• Monitor and maintain cleanliness and organization throughout food and beverage areas during the overnight shift.
• Operate dishwashing equipment to clean and sanitize china, glassware, silverware, cookware, and utensils.
• Sort, stack, and transport soiled items to designated cleaning areas.
• Return clean items to designated storage locations while minimizing breakage.
• Supply clean china, glassware, silverware, and equipment to restaurant, banquet, and culinary operations as needed.
• Clean and sanitize food preparation and service areas in accordance with health and safety regulations.
• Perform heavy-duty cleaning of ovens, grills, fryers, hoods, walls, floors, sinks, walk-in coolers, freezers, and other kitchen equipment.
• Sweep, mop, scrub, and maintain floors in kitchens, food and beverage areas, and service corridors.
• Empty trash and recycling containers and transport waste to designated disposal areas.
• Maintain proper storage and organization of stewarding supplies and equipment.
• Assist with setup and breakdown of buffets, banquet functions, and special events as assigned.
• Report equipment malfunctions, maintenance concerns, and safety hazards to management immediately.
• Follow sanitation, food safety, and chemical-handling procedures.
• Practice safe work habits and know the location and proper use of fire and life-safety equipment.
• Promote safety, cleanliness, respect, and guest satisfaction.
• Maintain a positive and professional attitude and cooperate with Culinary, Banquets, Restaurants, and fellow associates.
• Demonstrate initiative, accountability, and attention to detail; support operational goals through productivity, teamwork, and efficient execution.
• Maintain regular attendance and comply with company policies, standards, and grooming requirements.
• Perform other duties as assigned by management.
