About The Position

The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, and other items using machine and manual cleaning methods. The position also ensures that the dishwashing area remains clean, safe, and sanitary. The employee works primarily indoors in a hot, damp environment, with some work outdoors, and may occasionally be exposed to sharp machinery, broken glass, metal cans, and heat sources.

Requirements

Must be able to read labels on chemicals.
Knowledge of workplace safety procedures.
Ability to maintain a professional demeanor in high-stress situations.
Regularly walk and stand during the entire shift.
Frequently lift and carry racks or stacks of dishes, glassware, and utensils weighing up to 30 pounds, up to 50 times per shift.
Occasionally lift and empty trash cans weighing up to 150 pounds with assistance, up to two times per shift.
Frequently bend, stoop, reach, push, and lift.
Frequently wash hands.

Responsibilities

Sort and rinse dirty dishes, glassware, tableware, and cooking utensils, and place them in racks for the dish machine.
Sort and stack clean dishes, carry them to the cook’s line and appropriate storage areas, and rewash soiled dishes before delivery.
Change the dish machine water every hour.
Wash pots, pans, and trays by hand.
Remove trash and garbage to the dumpster.
Set up and break down the dishwashing area.
Clean and roll or unroll mats.
Fill and empty soak tubs with cleaning and sanitizing solutions.
Sweep and mop floors.
Assemble and disassemble the dish machine.
Sweep trash from the exterior of the restaurant and around the garbage dumpster.
Perform general restaurant and restroom cleaning as directed.
Wipe up spills to keep kitchen floors dry.
Notify the Manager when the dish machine wash or rinse cycle falls below safety-standard temperatures.
Perform other duties as assigned.
