About The Position

Iacofano's Catering & Events is hiring an Assistant General Manager to lead overnight kitchen operations in West Columbia, South Carolina. The company caters private jets, airlines, and corporate events around the clock from kitchens near the airport. The role owns overnight production, ensuring food is prepared to specification and ready on time for morning runs, while maintaining the standards required for private aviation catering.

The position is full-time and salaried, with five overnight shifts per week, typically totaling 50 hours. Additional hours are required for large events and holidays. Overnight leaders may have opportunities to advance to General Manager roles or support new-location openings as the company grows.

Requirements

• At least 2 years of experience leading a kitchen shift in high-volume catering, banquets, hotels, airline, or institutional food service.
• Experience independently running a shift and making operational decisions.
• ServSafe Manager (CFPM) certification, or ability to earn it within 60 days.
• Reliable availability for overnight shifts, weekends, and holidays.

Responsibilities

• Complete the overnight preparation and cook-chill plan to specification and on time for morning runs.
• Lead the overnight team by assigning stations, coaching employees, and maintaining standards.
• Complete and verify HACCP logs, temperature records, and sanitation before handover.
• Build and check late and ASAP aviation orders and ensure they leave on time.
• Provide a clear morning report to the day leadership team.
