Assistant General Manager – Overnight
About The Position
Iacofano's Catering & Events is hiring an Assistant General Manager to lead overnight kitchen operations in North Charleston, South Carolina. The company caters private jets, airlines, and corporate events around the clock. This leader owns overnight production and ensures food is prepared to specification and on time for morning runs, while maintaining food-safety standards and handling late and ASAP aviation orders. The role also includes leading and coaching the overnight team and providing a clear handover report to day leadership. The schedule is five overnight shifts per week, typically 50 hours, with additional hours for large events and holidays. Overnight leaders are considered first for General Manager and new-location opportunities as the company grows.
Requirements
- At least 2 years leading a kitchen shift in high-volume catering, banquets, hotels, airline or institutional food service.
- Experience running a shift independently and making operational decisions.
- ServSafe Manager (CFPM) certification, or ability to earn it within 60 days.
- Availability for overnight shifts, weekends, and holidays.

Responsibilities
- Complete the overnight preparation and cook-chill plan to specification and on time for morning runs.
- Lead the overnight team, assign stations, coach employees, and uphold standards.
- Complete HACCP logs, temperature checks, and sanitation accurately before handover.
- Build and check late and ASAP aviation orders and ensure they leave on time.
- Provide a clear report to the day leadership team each morning.
