About The Position

The Assistant Executive Steward at Mandalay Bay is responsible for assigned operational functions within the Convention & Banquets department and helps create an exceptional guest experience through welcoming, outstanding service. The role is performed in accordance with departmental and MGM Resorts International policies, practices, and procedures. The position includes supervising department operations, staff, guest-service delivery, kitchen and equipment cleanliness, supplies, and inventory.

Requirements

• High school diploma or GED.
• At least 2 years of experience in stewarding or administrative operations supervision.
• Ability to work varied shifts, including weekends and holidays.

Responsibilities

• Supervise assigned operational functions in line with the strategic plan, fiscal budget, and short- and long-term profitability objectives.
• Supervise the delivery and measurement of guest service in accordance with company service standards and brand attributes.
• Supervise assigned staff, including making hiring recommendations that support the company’s diversity commitment, training, coaching, providing performance feedback, recommending and administering discipline, and scheduling.
• Offer ideas and suggestions for new products, services, technology, and processes.
• Routinely inspect equipment and kitchen areas to ensure cleanliness and sanitary procedures are maintained.
• Requisition new and replacement equipment as needed.
• Approve requisitions for cleaning supplies and equipment and monitor supply requisitions to minimize costs without compromising quality or appropriate material use.
• Maintain inventory and records for dinnerware, flatware, and glassware; order china, glass, and silver.
