About The Position

Riviera Dining Group is seeking a skilled, detail-oriented Sushi Cook to support exceptional dining experiences in a fast-paced luxury environment. The role calls for technical ability, precision, organization, and passion for culinary excellence. Sushi cooks contribute to high-quality MediterrAsian cuisine by preparing sushi consistently and creatively while meeting food-safety and presentation standards. The listed duties describe the general nature of the work and are not exhaustive; RDG may modify or reassign duties and responsibilities.

Requirements

At least 2 years of experience as a sushi cook or in an Asian restaurant in a high-volume environment.
Strong knowledge of sushi types, knife skills, and sushi-rolling techniques.
Ability to follow recipes, perform basic arithmetic, and communicate clearly and effectively.
Understanding of safety, sanitation, and proper food-handling procedures.
Food Handler’s Permit required.
Flexible availability, including nights, weekends, and holidays.
Ability to speak, read, and understand basic cooking directions.

Responsibilities

Prepare maki, nigiri, sashimi, and other sushi with precision and consistency.
Prepare sushi rice to the required seasoning, texture, and presentation standards.
Chop, slice, and fillet fish while maintaining quality standards.
Customize orders to accommodate guest preferences and food allergies.
Follow prep lists and instructions from chefs and supervisors.
Work quickly and accurately in a high-volume environment while staying organized and composed under pressure.
Use, care for, and clean kitchen equipment and tools properly.
Comply with department policies, company standards, and state sanitation and health regulations.
Collaborate with the team and maintain reliable attendance and punctuality.
Maintain the confidentiality of company information, recipes, and preparation techniques.
