Requirements

  • A minimum of 2 years working experience as a Sous Chef in a high volume, fine dining restaurant.
  • Comfortable communicating in English.
  • Great communication skills with a strong customer service ethic.
  • Attention to detail is critical for this role.
  • Talent and commitment to service excellence and creativity.
  • Champions of working together.

Responsibilities

  • Managing our team of cooks.
  • Assisting with weekly labor schedules and handling revisions as necessary.
  • Encouraging, motivating and being accessible to employees.
  • Assisting with administering, coordinating and distributing information to all kitchen employees.
  • Maintaining accurate paperwork for scheduling, payroll and employee records.
  • Providing People & Culture with the necessary information to keep personnel files current.
  • Providing feedback to the Culinary Director and Executive Sous Chef for the preparation of kitchen employee performance reviews.
  • Ensuring a neat, clean and safe working environment.
  • Organizing and maintaining food storage, rotation and utilization.
  • Tasting and reviewing food products on a daily basis to ensure quality and consistency with preparation and presentation.
  • Assisting with developing, implementing and maintaining new recipes, presentations and products.
  • Implementing daily “special” menu at the direction of the Culinary Director or Executive Sous Chef.
  • Attending weekly Kitchen meetings.
  • Analyzing and monitoring the daily operation reports and tracking the kitchen’s inventory, placing orders, monitoring equipment maintenance and condition, and ensuring that a kitchen operates alongside state and federal health and safety codes during their day.
  • Ensuring guests receive nothing but the best experience through food production, preparation, plating and garnishing.
  • Cooking in any kitchen and covering any service.
  • Being flexible to the operation schedule.
  • Helping out in any area of the Culinary department as needed.
  • Planning and developing menus and recipes for special guest requests.
  • Acknowledging dietary restrictions and special occasions.
  • Preventing and correcting imperfections and blemishes that tend to come up.
  • Reporting imperfections and working with other positions to correct them.
  • Communicating with other departments and the extended hotel team to ensure alignment.
  • Fostering a We Care culture while maintaining hotel standards.
