Responsibilities

  • Assisting the Executive Pastry Chef in planning of food budgets and forecasts pertaining to the Pastry Kitchen.
  • Scheduling and coordinating the work of cooks to ensure that food preparation is on time and within budget.
  • Interviewing, training, supervising, coaching, counseling and disciplining all employees in the department in conjunction with HR and the Executive Pastry Chef.
  • Producing all pastry goods from scratch as required by the menu.
  • Designing and developing detailed food specifications.
  • Maintaining established food par levels and accurate paperwork for inventory.
  • Upholding departmental standards of quality and timing for delivery.
  • Training cooks in relevant aspects of pastry during their day.
  • Carrying out supervisory responsibilities in accordance with the organization’s policies and applicable laws.
  • Planning, assigning and directing work, appraising performance, rewarding and disciplining, addressing complaints and resolving problems.
  • Being fully in charge of production and ordering and managing amenity needs.
  • Maintaining kitchen logs for food safety program compliance internally and with the State.
  • Keeping management informed of excess food items that need to be utilized.
  • Safely and appropriately using baking and measuring tools, equipment, appliances to prepare baked goods.
  • Following and ensuring compliance with food safety handling policies and procedures, including personal hygiene.
  • Checking to ensure correct temperatures of kitchen appliances and food, and reporting issues to management.
  • Performing related duties and special projects as assigned.
  • Fulfilling special guest requests involving food allergies, dietary restrictions and special occasion amenities.
  • Preventing and correcting imperfections and blemishes that tend to come up.
  • Communicating with other departments and extended hotel team in order to ensure alignment.
