About The Position

The Noodle Bun Lead oversees daily operations within the noodle and bun production areas in the Central Kitchen. This role is responsible for ensuring consistent execution of Din Tai Fung quality standards, Standard Operating Procedures (SOPs), and food safety requirements. The Noodle Bun Lead coaches and develops team members, monitors production and quality, and supports operational efficiency through effective coordination of labor, workflow, and inventory.

Requirements

  • High school diploma or equivalent required
  • 1+ year of experience in a high-volume kitchen, food production, or manufacturing environment
  • Previous experience training or supporting team members in a lead or senior team member capacity
  • Basic knowledge of food safety and sanitation standards
  • Food Handler’s Certification (or ability to obtain prior to hire)
  • Ability to work a flexible schedule, including early mornings, evenings, weekends, and holidays
  • Applicant must be 18 years of age or older and able to provide documentation to work in the United States legally

Nice To Haves

  • 1–2+ years of experience in a lead or supervisory role in food production or restaurant operations
  • Experience working with dough-based products, noodle production, or similar manufacturing processes
  • Familiarity with production batching, inventory processes, and yield tracking
  • Bilingual or multilingual abilities (based on location needs)
  • Experience with training tools, SOP enforcement, or structured onboarding

Responsibilities

  • Train, coach, and develop team members on noodle and bun production processes; reinforce SOP adherence, food safety standards, and quality expectations; provide real-time feedback and support skill development to improve individual and team performance.
  • Oversee daily production operations, including ingredient receiving, dough preparation, and product output; ensure consistency, portion accuracy, and adherence to quality standards; identify and address gaps in execution in real time.
  • Act as a working lead by supporting hands-on production as needed, including operating machinery, preparing products, loading steamers, packing, and conducting quality checks to maintain production flow.
  • Ensure compliance with all food safety, sanitation, and labeling standards in accordance with company procedures and regulatory requirements; maintain cleanliness and organization of all production areas and equipment.
  • Support inventory monitoring, product organization, and supply management; coordinate materials and workflow to ensure efficient production; communicate operational needs and escalate issues as appropriate.
