The Manager supports the General Manager / Senior General Manager in overseeing daily airport restaurant operations with a focus on front-of-house (FOH) leadership. This exempt, non-tip-eligible role is responsible for hiring, training, and staffing FOH team members, ensuring smooth execution of fast-paced service, and maintaining high standards of safety, sanitation, airport compliance, and hospitality. The Manager also assists with cost control, terminal facilities management, and operational excellence, playing a key role in delivering Olive & Finch's mission within a unique, high-volume airport environment.

Requirements

  • Must be able to successfully pass the required federal background screening and fingerprinting process mandated by Denver International Airport to secure and maintain a DEN airport badge.
  • 2-4 years of progressive restaurant management or leadership experience required.
  • Proven ability to lead, train, and develop diverse FOH teams while inspiring accountability.
  • Strong knowledge of guest service, food safety, sanitation, and high-volume airport operational standards.
  • Solid financial savvy with experience in cost control, product tracking, and labor scheduling.
  • Flexible availability including early mornings, evenings, weekends, and holidays to manage multi-shift airport operations.

Nice To Haves

  • Experience in a high-volume airport, hotel, or complex hospitality environment is strongly preferred.

Responsibilities

  • Oversee and support daily FOH operations, serving as a role model for high-volume airport hospitality and managing escalated service recovery professionally in a fast-paced environment.
  • Hire, train, schedule, and develop FOH staff, fostering a positive, inclusive, and professional culture of accountability.
  • Uphold strict health, sanitation, safety, and Denver International Airport regulatory compliance standards throughout the restaurant.
  • Assist restaurant leadership with daily cost controls, including labor optimization, supplies, and operating expenses.
  • Ensure terminal facilities and equipment are properly maintained; monitor cleanliness and coordinate with leadership to address technical equipment triage and maintenance.
  • Lead pre-shift meetings, provide in-the-moment coaching to FOH team members, and step in to lead shifts independently in the General Manager's absence.
  • Support the implementation of company systems, checklists, and training programs to maintain operational consistency and brand standards.
  • Partner closely with Back of House (BOH) leadership to ensure seamless communication, timing, and execution between FOH and BOH.
