About The Position

The Executive Chef leads culinary production and daily kitchen operations for Bourbon Steak at Waldorf Astoria Monarch Beach Resort & Club in Dana Point, California. The role oversees meal preparation, food quality, presentation, menu development, kitchen efficiency, financial performance, and team development. The Executive Chef ensures consistent culinary execution and compliance with applicable health, safety, sanitation, and alcohol-awareness requirements while helping deliver memorable guest experiences.

Responsibilities

• Oversee daily kitchen operations, including meal preparation, food quality, presentation, and kitchen organization.
• Select high-quality ingredients and uphold presentation standards and consistency in dish execution.
• Create and implement new dishes and seasonal menus.
• Control costs, monitor budgets, and optimize profitability through efficient production planning.
• Manage kitchen systems, reporting, and departmental coordination to streamline daily operations.
• Supervise and support team members, monitor performance, provide coaching, and foster a positive and productive work environment.
• Maintain compliance with health, safety, sanitation, and alcohol-awareness regulations.
