About The Position

You architect and elevate a world-class food and beverage portfolio. You have proven benchmarks and success at strategic and operational levels, and you are equally comfortable determining direction, mentoring leaders, reviewing financials, stepping into service when necessary, and elevating the standards expected for the guest and member experience. As Vice President of Food & Beverage at Nemacolin, you lead all dining operations across multiple outlets, from Forbes-rated luxury venues to refined casual experiences. As a key member of the executive leadership team, you shape strategy, drive financial performance, cultivate culinary innovation, and develop leadership talent while ensuring that service standards consistently meet and exceed luxury benchmarks.

Requirements

  • 6-8 years or more of progressive restaurant leadership experience, including oversight of multiple outlets
  • Proven success within Michelin-starred or Forbes Five-Star environments preferred
  • Executive-level communication skills across ownership, leadership, associates, and external partners
  • Proven success in financial management, budgeting, and cost control
  • Operational fluency across kitchen and dining room environments
  • A demonstrated record of staff development, retention, and leadership succession planning
  • Advanced critical thinking and independent decision-making capability
  • Strong time management and multi-project execution ability
  • Discretion in handling confidential information
  • Superior guest relations expertise
  • Proficiency in Microsoft Office (Word, Excel, PowerPoint)
  • Ability to perform physical requirements, including an ability to stand continuously for 95%, operate equipment for 15%, kneel for 20%, bend for 50%, climb for 35%, and drive for 0% of their scheduled shift
  • Relevant food and beverage credentials required
  • Minimum age of 18
  • Fluency in English
  • Ability to perform basic mathematical functions
  • Ability to work varied shifts, including evenings, weekends, and holidays

Responsibilities

  • Strategic oversight of all food and beverage operations, including restaurants, lounges, banquets, room service, minibars, and beverage programs
  • Financial performance aligned with annual budgets, revenue forecasts, and profitability targets
  • A collaborative executive partnership with resort ownership and leadership to ensure unified culinary and service direction
  • An engaged, high-performing leadership culture across FOH and BOH teams
  • Growth of Nemacolin and Forbes standards through visible presence, guest interaction, and operational accountability
  • Confidential executive communication on matters related to ownership and leadership priorities
  • Cross-departmental collaboration and operational support based on business demands
  • Hands-on leadership presence in dining rooms and kitchens, stepping into line operations when needed
  • A culture of proactive guest and member engagement, including timely follow-up on concerns and relationship-building with key clientele
  • Annual operating budgets and financial plans that support long-term growth
  • Daily financial review processes that translate data into actionable leadership guidance
  • Payroll and scheduling oversight, ensuring accuracy, efficiency, and labor optimization
  • Regulatory compliance across RAMP, ServSafe, Knife and Blade certifications, and all required leadership training
  • Consistent product quality, culinary innovation, and evolving menu strategies that reflect emerging trends and guest preferences
  • Proper food handling protocols, labeling, rotation systems, and sanitation standards
  • Routine safety and sanitation inspections exceeding local, state, and federal regulations
  • Impartial coaching and performance feedback during training, service, and recovery reviews
  • Clear communication of resort updates and operational direction to associates
  • Completion of executive deliverables, correspondence, and administrative responsibilities that advance departmental success
