The Sanitation Steward (Dishwasher) is responsible for operating and maintaining cleaning equipment and tools, including the dish washing machine, hand wash stations, pot-scrubbing station, and trash compactor. This role involves washing and disinfecting kitchen and storeroom areas, and equipment. The position requires the use of detergent, rinsing, and sanitizing chemicals in the compartment sink to clean dishes. The Sanitation Steward will inspect, pull, and stack cleaned items, and send soiled items back for re-scrubbing and re-washing. They will rack and spray all racked items with hot water to loosen and remove food residue, empty and maintain trashcans and the dumpster area, and clean and mop all areas. Additionally, the role includes breaking down cardboard boxes and placing them and other recyclables in the recycle bin. The position adheres to all Open Hand safety guidelines, rules and regulations, company policy manual, code of conduct, Good Manufacturing Practices (GMPs), and attendance policy. It also assists with maintaining sanitation records conforming to federal/state and departmental guidelines and complies with all health and sanitation regulations. The Sanitation Steward is responsible for the maintenance and cleanliness of ALL culinary equipment, small wares, and areas including coolers, freezers, hallways and pass through, and maintaining a safe and clean work environment, using equipment only as intended. They will clean all dishes, pots, pans, utensils, speed racks and other items to facilitate food service operation, clean up spilled food, drink, broken dishes, and remove all trash and cardboard. The role also involves maintaining the kitchen floor with regular sweeping and mopping and organizing the mop room/janitorial supply room. The Sanitation Steward will assist the Head Cook in maintaining sanitation of kitchen equipment such as skillets, kettles, combi ovens, chillers etc., and perform regular cleaning and maintenance of the kitchen sink area as well as the dish washing machine. They will also assist the AM/PM supervisor in opening/closing of the kitchen facility and ensure enough clean linens, including towels and aprons, are laundered and meeting daily requirements.
