About The Position

The Sanitarian supervises, coordinates, and controls safety and sanitation at ESPN Wide World of Sports. The role monitors food-safety practices, sanitation procedures, equipment condition, and compliance with applicable standards. It also trains and directs employees, supports food-service operations, and advises management on purchasing needs while minimizing waste and avoiding shortages.

Responsibilities

Complete monthly safety and sanitation checklists in all areas.
Complete and monitor temperature logs for coolers, freezers, and ice machines throughout all areas.
Ensure chemicals and appropriate safety materials are available, including sanitation buckets, test strips, PPE, and SDS.
Ensure cleaning supplies are in place and that cleaning is performed properly; alert department heads to shortcomings.
Ensure food items are properly labeled and spot-check cooking, hot-holding, cold-holding, and cooling temperatures.
Inspect equipment, maintain a maintenance log, and notify leaders about items requiring attention.
Accompany the Health Department or Everclean during inspections and audits.
Spot-check dish machines, confirm final-rinse temperatures are properly tested, and ensure items are air-dried properly.
Train employees; plan, assign, and direct work; appraise performance; reward and discipline associates; and address complaints and resolve problems.
Advise management of purchasing requirements, focusing on minimizing waste and avoiding product shortages.
Use approved food recipes and production standards to ensure quality, serving temperatures, and standard portion control.
Operate and clean equipment according to department procedures after each use.
Store, label, and date food items according to policy, and maintain food rotations to minimize spoilage and waste.
Follow HACCP guidelines to ensure the quality and safety of the food supply.
Operate food-service equipment safely and according to established policies and procedures.
Help serve meals and remain present during scheduled meal periods to receive customer comments and feedback.
Perform other duties as assigned.
