About The Position

The QSR Manager of Marketplace, Grab & Go & Coffee Shops provides unified leadership over all quick-service, retail, and coffee shop outlets at Catawba Two Kings Casino. The role covers the Marketplace Food Hall’s five culinary concepts (Taco/Mexican, Grill, BBQ, Asian, and Chicken), the Sweet Shop and Coffee Shop inside the Marketplace, and the hotel Grab & Go coffee shop, which operates 24 hours a day, seven days a week. The manager develops a cross-trained retail and counter-service team to deliver consistent speed, quality, and hospitality across all dayparts, including overnight at Grab & Go. The position oversees daily front-of-house operations, staffing and development, coffee and espresso service, kiosk and product coordination, food safety, POS and cash controls, labor scheduling, inventory, guest service, and operational reporting. The manager coordinates with the Production Kitchen, culinary leadership, and beverage leadership and reports daily and weekly labor, COGS, and operational recaps to the Director of F&B.

Requirements

Minimum 3 years of management experience in a high-volume quick-service, food hall, coffee shop, or multi-concept retail food environment.
Must hold ServSafe Food Handler and ServSafe Alcohol Certification before starting the position.
Must be able to obtain and maintain a valid Catawba Gaming License.
Must adhere to Catawba Gaming Commission regulations, company policies, and procedures.
Must be able to work flexible schedules, including nights, weekends, and holidays.
Must be at least 21 years of age.
Must meet casino employment and background check requirements.
Ability to stand and walk for extended periods.
Ability to lift up to 50 lbs.

Nice To Haves

Responsibilities

Manage daily front-of-house operations across the five Marketplace food concepts, Sweet Shop/Coffee Shop, and Grab & Go/Hotel Coffee Shop.
Recruit, hire, train, schedule, coach, and develop QSR attendants, cashiers, baristas, and retail team members across all locations.
Build a cross-trained team capable of covering Marketplace and Grab & Go shifts, including overnight coverage.
Establish and maintain a consistent coffee and espresso beverage program across the Sweet Shop and Grab & Go coffee shop.
Ensure speed-of-service standards are met at all Marketplace stations during peak casino traffic periods.
Lead daily pre-shift meetings across all locations and communicate menu changes, product counts, daily specials, and operational priorities.
Coordinate daily with the Production Kitchen on fresh-baked goods inventory, packaged product rotation, and Grab & Go retail par levels.
Manage Grab & Go self-serve kiosk operations, including product availability, pricing accuracy, and guest usability.
Coordinate with beverage leadership on the casino bar inside the Marketplace.
Monitor and enforce food safety, sanitation, and allergen awareness standards at all outlets.
Coordinate with culinary leadership on recipe training, station readiness, product consistency, and waste management.
Oversee Agilysys InfoGenesis POS transactions, cashier accuracy, and nightly close-out audits across all locations.
Manage labor scheduling across a 24/7 operating model and ensure strong overnight supervisor or keyholder coverage at Grab & Go.
Manage supply ordering, par levels, and inventory checks for front-of-house materials at all outlets.
Handle guest feedback, service recovery, and escalated complaints across all locations.
Submit daily and weekly labor, COGS, and operational recaps to the Director of F&B.
Perform other duties as assigned.
