About The Position

The Prep Cook is responsible for producing food items listed on the daily prep sheet according to Torchy’s standards and recipes. The role also includes preparing masa and tortillas, maintaining a clean and organized kitchen, following food-safety practices, documenting food weights and yields, and helping with other duties as requested by management.

Requirements

• Meet state and local requirements for Food Handler’s certification; obtain required certification by the first day or within the timeline required by the location.
• Familiarity with kitchen equipment, including a fryer, char grill, flat top, stove, RoboCoups, immersion blender, dicers, mandolin, and scales.
• Ability to lift at least 40 lbs.
• Basic knife safety, communication, and reading skills, and ability to multitask.
• Must be at least 18 years old.

Responsibilities

• Produce food items listed on the daily prep sheet, following recipes in the Taco Bible and Torchy’s standards.
• Maintain a clean and organized kitchen, including the walk-in, and detail kitchen equipment daily.
• Set up and break down the work station, ensuring it is ready for the shift and clean afterward.
• Follow proper food-safety and HACCP techniques, including FIFO inventory management.
• Record pre- and post-weights of food items and track recipe yields.
• Label, date, and fill pans correctly for produced items.
• Rotate products as needed and assist with other duties requested by management.
• Produce masa and press corn tortillas using a tortilla press.
• Slack flour tortilla dough balls and properly book flour and corn tortillas.
• Cook tortillas on a flat top to the correct specifications.
