About The Position

Supervise the kitchen staff and daily kitchen operations, including the production, preparation, and presentation of food for the hotel's restaurants and room service. Ensure food is safe, sanitary, consistent, high quality, and compliant with applicable standards and regulations. Monitor food and labor costs and help deliver profitable, competitive products.

Requirements

• High school education or equivalent.
• One to two full years of employment in a related position with this company or another organization.
• Advanced knowledge of food-profession principles and practices, including experiential knowledge for managing people or complex problems and food and beverage management.
• Oral and written communication skills.
• Moderate hearing to communicate with employees and hear machinery and equipment timers for safety.
• Excellent vision for safety and to assess food preparation.
• Comprehension and literacy sufficient to read and write, review records and special requests, and analyze information for budgeting.
• Ability to lift, push, pull, and carry food and small equipment, bend, move throughout the work area, and stand continuously during preparation and service.

Responsibilities

• Supervise daily food production, preparation, and presentation to ensure consistent quality and compliance with franchise standards.
• Supervise kitchen staff; attract, retain, and motivate employees; provide training, development, coaching, and counseling; and recommend discipline or termination when appropriate.
• Schedule and supervise kitchen, equipment, and related-area maintenance and sanitation to maintain a safe, healthy workplace and meet applicable standards and regulations.
• Assist with monitoring and controlling labor and food costs.
• Promote the Accident Prevention Program to minimize liabilities and related expenses.
