About The Position

The Director of Dietary coordinates resident dietary menu planning and oversees the daily food-preparation operations of dietary staff. This role ensures employees who prepare and serve food and maintain food-service areas and equipment follow the proper procedures required by state and federal regulations. The Director also oversees meal service, staff training and scheduling, departmental labor and budget control, food quality, and sanitation.

Requirements

High school diploma or equivalent; alternatively, an equivalent combination of education and experience.
A minimum of 3 years of previous experience in volume and modified diet preparation.
State approval in food handling and preparation.
ServSafe certification.

Nice To Haves

Previous experience in a long-term care or hospital setting.

Responsibilities

Create dietary menus and monitor food-preparation methods and portion sizes, accounting for residents’ nutritional requirements.
Comply with state and federal sanitation and other applicable standards, and oversee dietary staff compliance.
Lead or assist with meal preparation when needed.
Inspect food, supplies, and equipment to maintain stock levels and ensure quality standards are met.
Oversee meal service while on duty and direct the preparation of food and beverages.
Investigate and resolve complaints regarding food quality and service.
Manage labor and budget control for the Dietary department.
Train and oversee dietary staff to ensure quality standards and service.
Schedule staff hours and coordinate dietary personnel assignments.
Report issues or problems to the Administrator.
Assist families and other visitors as needed.
Attend in-services and other required meetings.
Perform other duties and tasks as assigned.
