About The Position

The Director of Dietary coordinates resident menu planning and oversees the daily food preparation and service operations performed by dietary staff. The role ensures that employees preparing and serving food and maintaining food-service areas and equipment follow applicable state and federal regulations and sanitation standards. The Director also oversees department staffing, training, service quality, labor, and budget control, and reports issues to the Administrator.

Requirements

High school diploma or equivalent.
At least 3 years of experience in volume and modified diet preparation, or an equivalent combination of education and experience.
State approval in food handling and preparation.
ServSafe certification required.

Previous experience in a long-term care or hospital setting.

Responsibilities

Create dietary menus and monitor food preparation methods and portion sizes, taking into account residents’ nutritional requirements.
Comply with state and federal sanitation and applicable standards, and oversee dietary staff compliance.
Lead or assist with meal preparation when needed.
Inspect food, supplies, and equipment to maintain stock levels and ensure quality standards.
Oversee meal service while on duty and direct preparation of food and beverages.
Investigate and resolve complaints about food quality and service.
Manage labor and budget control for the Dietary department.
Train and oversee dietary staff to ensure quality standards and service.
Schedule staff hours and coordinate assignments of dietary personnel.
Report issues or problems to the Administrator.
Assist families and other visitors as needed.
Attend in-services and other required meetings.
Perform other duties and tasks as assigned.
