About The Position

The Director of Dietary coordinates resident dietary menu planning and oversees the daily operations of food preparation by dietary staff. The role ensures that employees preparing and serving food and maintaining food-service areas and equipment follow appropriate procedures and applicable state and federal regulations. The Director also oversees meal service, dietary staff, department scheduling, labor, and budget control, and reports issues to the Administrator.

Requirements

• High school diploma or equivalent, or an equivalent combination of education and experience.
• At least 3 years of previous experience in volume and modified diet preparation.
• State approval in food handling and preparation.
• ServSafe certification required.

• Previous experience in a long-term care or hospital setting.

Responsibilities

• Create dietary menus and monitor food preparation methods and portion sizes, considering the nutritional requirements of specific residents.
• Comply with state and federal sanitation and other applicable standards, and oversee dietary staff compliance.
• Lead or assist with meal preparation when needed.
• Inspect food, supplies, and equipment to maintain stock levels and ensure quality standards are met.
• Oversee meal service while on duty and direct the preparation of food and beverages.
• Investigate and resolve complaints regarding food quality and service.
• Manage labor and budget control for the Dietary department.
• Train and oversee dietary staff to ensure quality standards and service.
• Schedule staff hours and coordinate assignments of dietary personnel.
• Report issues or problems to the Administrator.
• Assist families and other visitors as needed.
• Attend in-services and other required meetings.
• Perform other duties and tasks as assigned.
