About The Position

The Cook, under general supervision, performs a variety of moderately difficult duties preparing and cooking food items served in the organization’s retail food service operations. The position reports to the Chef. The role is an hourly, full-time, non-exempt union position based in Escondido, California. If selected, union fees and dues apply.

Requirements

• Culinary school and/or experience working in a full-service restaurant.
• Knowledge of techniques, equipment, basic food handling, preparation, and cooking skills.
• Know proper preparation and cooking methods for a wide variety of food items.
• Know commercial kitchen equipment and utensils.
• Know sanitation and safety methods for food preparation and handling.
• Understand basic inventory controls.
• Have effective leadership skills.
• Cook and bake food in large quantities.
• Operate commercial equipment and utensils.
• Understand recipes and menus.
• Evaluate and determine food condition, doneness, and decorations.
• Understand and carry out instructions.
• Keep simple records.
• Supervise and train kitchen helpers.

Responsibilities

• Serve orders for food and beverages.
• Prepare and cook menu items and other dishes.
• Follow food orders.
• Portion, arrange, and garnish food.
• May coordinate and supervise other food service employees.
• May serve food at food stands and perform cashier duties.
