The Busser at Canopy by Hilton Deer Valley seamlessly transitions between restaurant outlets and banquet events, ensuring a high level of cleanliness and support across both environments. Grounded in a strong Culture of Care, this role is responsible for clearing and resetting dining areas, executing precise table maintenance, and maintaining smooth floor operations while strictly adhering to property standard operating procedures (SOPs). By focusing strictly on service support and floor execution, this position remains distinct from other dedicated food and beverage roles such as server, host/hostess, bartender, or utility positions.

  • Must possess or successfully obtain a valid Utah DABS Alcohol Server Certification (S.I.T. or equivalent approved state training) within 30 days of hiring.
  • A valid local Food Handler's Permit must also be obtained within 30 days of employment.
  • Continuous standing, walking, and moving across varied floor surfaces throughout an 8-hour shift.
  • Ability to lift, carry, and balance professional food and beverage service trays up to 30 lbs.
  • Ability to lift, push, pull, or move banquet tables, chairs, and rolling equipment carts weighing up to 50 lbs. with assistance.
  • Strong manual dexterity to operate necessary cleaning equipment and handle fragile supplies safely.
  • Flexible scheduling availability required, including early mornings, late evenings, weekends, and holidays based on group bookings and historical property occupancy.

Nice To Haves

  • Prior food and beverage experience in a hotel, upscale restaurant, or high-volume banquet operation is preferred but not required; a strong work ethic and willingness to learn are essential.

Responsibilities

  • Assist Servers actively by monitoring dining areas for empty plates, used silverware, and completed courses to execute continuous, unobtrusive "pre-clearing."
  • Clear remaining tabletop items immediately upon guest departure, safely transporting dirty dishes, glassware, and flatware to the dishwashing area.
  • Sanitize table surfaces thoroughly according to health protocols and quickly reset stations to brand standards for the next seating.
  • Keep service stations fully stocked with polished silverware, clean glassware, fresh linens, ice, and necessary condiments throughout the shift.
  • Promptly clean up unexpected spills or broken items on the floor to maintain a safe, spotless environment for guests and colleagues.
  • Communicate efficiently with the service and host teams regarding table turnover status to minimize guest wait times.
  • Review operational directions to assist in the physical setup and teardown of event rooms, positioning tables, chairs, linens, and buffets efficiently.
  • Support Servers during banquet service styles—including plated courses, buffets, and passed hors d'oeuvres—ensuring quick breakdown and back-of-house staging.
  • Assist in executing synchronized table clearing during plated events, removing items from tables simultaneously once guests have finished.
  • Maintain strict organization and cleanliness in back-of-house banquet storage spaces, ensuring backup glassware, silverware, and holloware remain accessible and stocked.
  • Return all cleared dishware, glassware, and silver to the dishwashing area safely, sorting items systematically to prevent breakage.
  • Hand-polish washed glassware and flatware efficiently to keep backup inventory pristine and ready for immediate service.
  • Replenish bar ice bins continuously and ensure a steady supply of clean, polished glassware is available to the Bartenders during peak service hours.
  • Assist in stocking the bar with liquor, wine, beer, mixers, and fresh garnishes according to par levels and operational needs.
  • Help maintain the cleanliness and organization of back-of-the-bar storage areas, coolers, and keg rooms.
  • Safely handle and transport empty bottles, recycling, and trash from the bar area to designated disposal zones.
  • Assist in securing restricted beverage inventory in designated, DABS-approved lockups during non-service hours as directed.
  • Adhere strictly to the Utah 100% ID law by checking the physical or approved mobile identification of every single customer ordering alcohol, regardless of age appearance.
  • Support front-of-house alcohol service compliance by safely clearing empty beverage containers, monitoring tables for potential breakage hazards.
  • Assist in identifying and reporting any guest compliance issues or safety hazards on the floor immediately to a Server or Manager.
  • Maintain clear pathways in high-traffic dining and banquet zones to meet local safety and fire codes.
