About The Position

This position is responsible for preparing various pastry items, maintaining inventory, and ensuring high standards of sanitation and organization within the bakery. The role requires adherence to Club policies, effective communication with management, and a strong work ethic. The Bakery Cook will prepare doughs, batters, ice cream, confections, and other pastry items according to recipe cards and production sheets, minimizing waste and ensuring product availability. They will also be responsible for proper storage, sanitation, and personal hygiene.

Responsibilities

  • Maintain working knowledge of Club policies and guidelines.
  • Possess technical skills needed to fulfill job duties and show interest in self-improvement.
  • Exhibit a professional attitude towards superiors, colleagues, and work, ensuring timely check-ins before leaving.
  • Perform correct inventories and requisitions of all items and communicate with Pastry Chef and Kitchen Management on service needs.
  • Understand and use recipe cards and production sheets to produce the correct amount of mise-en-place for daily use with minimal waste.
  • Prepare all dough and batters to proper doneness and flavor correctly.
  • Check with Pastry Chef for any special items needed for meal periods.
  • Properly assemble all tools and utensils needed to accomplish job duties.
  • Prioritize work and ensure immediate needs are met.
  • Understand and show commitment to teamwork, knowing when to request or offer help.
  • Understand and follow sanitation practices.
  • Properly cool and store all batters, doughs, bases, sauces, and baked products.
  • Keep bake shop and coolers clean and neat, ensuring all items are wrapped and dated during the shift.
  • Exhibit and use proper personal hygiene, and dress professionally.
  • Keep cuts, abrasions, and sores covered.
  • Use rubber gloves when necessary.
  • Prepare all pastry items including but not limited to cakes, pies, mousses, fillings, and cookies as assigned.
  • Produce ice cream, ganaches, icing, batters and confections, etc. to maintain an inventory of pastry at all times.
  • Prepare and serve items in accordance with portion and presentation standards.
  • Notify the Pastry Chef in advance of expected product shortages.
  • Maintain the highest sanitary condition.
  • Assist Pastry Chef and other pastry cooks in the completion of other duties as assigned.
  • Make sure all items are wrapped, dated, labeled, and stored in a proper fashion.
  • Maintain safety, sanitation, and security in the work station.
