Assistant Executive Steward

About The Position

The Assistant Executive Steward manages daily kitchen utility operations, stewarding processes, budget cost controls, departmental staffing, and inventory controls. The role oversees cleanliness in dish rooms, kitchens, bar areas, and back docks, as well as maintenance and proprietary night cleaning, in accordance with health department policy and company expectations. The Assistant Executive Steward reports to the Executive Steward and assumes the Executive Steward’s responsibilities when that person is absent.

Requirements

Ability to obtain SERV Safe Certification.
Knowledge of kitchen equipment and sanitation guidelines.
Strong written and verbal communication skills.
Moderate computer skills.
Three years of management experience in procurement, food and beverage, culinary, or a related professional area in stewarding.

Responsibilities

Monitor sanitation and daily department operations, including attendance, scheduling, and training compliance.
Assist the Executive Steward in creating and implementing standard operating procedures and in developing training, counseling, and disciplinary strategies for line-level staff within company guidelines.
Oversee implementation and accountability of the Kana trainer program and virtual training, and work with shift managers to develop their management skills.
Assist with inventories of chemicals, dry goods, disposables, and china, glassware, and silverware, including purchases for inventory and daily operating needs.
Conduct walkthroughs to address health and safety compliance, safety violations, and departmental and shift efficiency.
Monitor completion of staff training, accident reports, forms, and follow-up with the safety department.
Oversee and follow up on setup and breakdown for catering, special, and sales events as they relate to stewarding schedules and operations.
Communicate and ensure compliance with departmental and Nation standards among overnight Deep Clean teams.
Delegate tasks to shift managers and assistant stewarding managers and follow up on their completion.
Assume Executive Steward responsibilities when the Executive Steward is absent.
Perform other tasks as assigned.
