About The Position

The National, a luxury hotel in Oklahoma City located in the historic First National Center, is hiring for an AM Prep Cook. This role is crucial in creating memorable guest experiences by ensuring great food starts with great preparation, organization, and attention to detail. The position emphasizes the importance of fresh ingredients, proper preparation, consistent execution, cleanliness, food safety, and teamwork within the kitchen environment.

Requirements

  • Previous food preparation or kitchen experience preferred.
  • Previous restaurant, hotel, resort, or hospitality experience preferred.
  • Knowledge of basic food preparation, kitchen sanitation, and food safety practices.
  • Good and safe knife-handling and kitchen equipment skills.
  • Ability to follow recipes, production lists, verbal instructions, and written procedures.
  • Ability to learn and retain a large amount of information in a short period of time.
  • Ability to use good judgment, initiative, and teamwork.
  • Ability to maintain food quality and sanitation standards regardless of business or staffing levels.
  • Ability to adapt to changing situations, procedures, priorities, and staffing needs.
  • Ability to maintain effective working relationships with fellow Curators, Supervisors, and other departments.
  • Must maintain regular attendance and punctuality and report to work in a clean, complete uniform and ready to work.
  • May be required to work nights, weekends, holidays, and/or overtime based on business needs.

Responsibilities

  • Following daily production lists and preparing ingredients for the Curator Café menu with accuracy and efficiency.
  • Setting up, maintaining, and breaking down your workstation throughout the shift.
  • Preparing and handling food according to established recipes, procedures, quality standards, and sanitation requirements.
  • Keeping workstations, equipment, tools, storage areas, and floors clean, organized, and properly sanitized.
  • Maintaining proper food temperatures, product rotation, storage, cooling, and handling procedures.
  • Working safely and efficiently with knives, kitchen equipment, and other food preparation tools.
  • Monitoring waste and helping maintain food cost through proper preparation, portioning, storage, and product usage.
  • Communicating maintenance concerns, supply needs, or other issues to your supervisor as they arise.
  • Supporting the kitchen team wherever needed and stepping in to help keep production moving during busy periods.
  • Training and supporting fellow Curators on proper food preparation, safety, sanitation, and kitchen procedures.
  • Working independently, showing initiative, and finding ways to keep things moving without always needing to be asked.
  • Responding professionally to questions and requests from guests, fellow Curators, and leadership.
  • Taking pride in the behind-the-scenes preparation that helps every guest experience start with something delicious.
