About The Position

Chartwells Higher Education is seeking a Catering Sous Chef for American University in Washington, DC. The role supports catering culinary operations, including supervising and preparing food, cooking menu items, developing daily menus and their preparation and garnishment, and managing inventory and ordering. The Sous Chef may supervise hourly associates and collaborates with the Executive Chef and culinary team on menus and ordering. The position also supports cost controls, catering event execution, culinary program launches, and client relationships.

Requirements

Culinary or kitchen management experience, depending on formal degree or training.
Must be experienced with computers.
ServSafe® Certified.

Nice To Haves

Associate degree or equivalent experience.
High-volume, complex foodservice operations experience is highly desirable.
Institutional and batch cooking experience is helpful.
Comprehensive knowledge of food and catering trends, with a focus on quality, production, sanitation, food cost controls, and presentation.

Responsibilities

Assist the Executive Chef and culinary team with managing cost controls and controlling account expenditures.
Assist the Executive Chef and culinary team with planning and creating menus.
Produce and execute catering events.
Roll out new culinary programs in conjunction with the marketing and culinary teams.
Foster strong client relationships to align programs with client objectives and drive satisfaction and retention.
Assist in supervising, preparing, and cooking food items.
Develop daily menu items, including their preparation and garnishment.
Manage inventory and ordering; assist with ordering in collaboration with the Executive Chef and chefs.
May supervise hourly associates.
Perform other duties as assigned to support efficient dining service operations.
