About The Position

The Reikart House, a Tribute Portfolio Hotel, is seeking a Prep Cook to join the award-winning team at their fine dining restaurant, Jazzboline. The role involves preparing food items according to production requirements and maintaining high standards of food preparation in a safe environment.

Requirements

• Minimum one year of cold prep work or food service-related work.
• Knowledge of cold prep, proper knife handling, maintaining proper temperature, sanitation, and light dessert knowledge.
• Minimal hearing to hear timers and coordinate with other kitchen staff.
• Moderate vision to check food quality.
• Minimal speech communication skills to read production charts/recipes.
• Ability to regularly lift food cases and metros weighing up to 70 lbs.
• Ability to push and pull carts.
• Ability to regularly bend to lift items and supplies.
• Mobility to regularly move throughout the kitchen.
• Ability to stand continuously, with potential for stationary periods.
• High school education or equivalent experience.

Responsibilities

• Prepare all food items according to recipe cards and correct handling procedures.
• Maintain the highest quality and appearance of all foods served from the kitchen, ensuring plates are clean and appetizing.
• Maintain proper par levels per estimates on the production sheets and ensure top-quality freshness.
• Utilize leftovers and maintain proper storage on the hot food side.
• Label and date all food.
• Maintain clean and orderly refrigerators and work areas.
• Ensure all stations are properly cleaned at the end of the shift and the evening.
• Rotate all foods and correctly fill out production charts.
• Coordinate and expedite during peak business periods to accelerate service.
