About The Position

The Prep Cook role is responsible for back of house food daily operations such as prepping and preparing dishes for guests to ensure high quality food is served and stocked at a fast-paced environment while accommodating to any guest food preferences, allergies and dietary restrictions. This role plays a key part in maintaining a clean, efficient and friendly kitchen environment and requires collaborative team skills, attention to detail and the ability to work in a fast-paced setting.

Requirements

  • Must be at least 16 years of age.
  • If you are under the age of 18 and have not completed high school (or equivalent), you must be able to obtain a work permit.
  • Must have a valid and current Orange County, California Food Handler’s Certification.
  • Strong multi-tasking and communication skills with a team-focused mindset.
  • Team-oriented with collaborative problem-solving skills and a positive, outgoing attitude.
  • Ability to handle guest and team member orders accurately and responsibly.
  • Ability to read, understand and follow food recipes, safety procedures and written instructions.
  • Strong attention to detail and situational awareness, including shifting priorities and monitoring team needs.
  • Effective memory recall for food recipes and ingredients and allergen knowledge.
  • Constant standing, reaching, bending and grasping.
  • Ability to communicate clearly with team members and leadership.
  • Ability to remain both stationary and in constant motion for extended periods (standing for most of the shift).
  • Ability to lift, push, pull or carry up to 40 pounds (e.g., cases of ingredients, boxes, small wares).
  • Ability to use hands and arms for repetitive motions, including twisting, stirring, pouring and stocking.
  • Ability to work in hot or cold environments depending on prep station (e.g., near hot fryers, pizza ovens).
  • Fast-paced kitchen environment with frequent task changes, noise and shifting priorities.
  • Exposure to cleaning solutions, operational equipment, glassware and sharp tools (e.g. box cutters, knives).
  • Exposure to various food and beverage allergens and requires strict adherence to health and safety regulations.
  • Schedules may include evenings, weekends, holidays and extended hours depending on business needs.
  • Work environments include indoor kitchen areas with variable temperatures (e.g. extreme heat and extreme cold).

Nice To Haves

  • Prior prep cook or line cook experience in a theme park, hotel or any food service environment is preferred.
  • Prior completion of the California Food and Beverage Allergen training is preferred.

Responsibilities

  • Prep, stock and prepare high quality food dishes in accordance with standardized recipes and guest preferences.
  • Prepare simple components of certain dishes including chopping meat, cutting fruit and preparing sauces.
  • Prep menu items including baking cookies and preparing salads, fresh fruits, pastries, parfaits, etc.
  • Set up/close down prep station(s) at each shift, ensuring cleanliness, organization and functional equipment.
  • Maintain cleanliness of the prep station(s), its countertops, tables, fridges, freezers, small wares, kitchen equipment and surrounding areas throughout the shift.
  • Stock and replenish various meats, vegetables, carbs, sauces, etc. into designated fridges, freezers or storage racks.
  • Assist with food allergens and dietary restriction orders including vegan, vegetarian, diabetic and gluten-free options.
  • Complete closing duties, including cleaning, sanitizing, restocking, polishing and any checkout procedures.
  • Secure and verify all kitchen equipment including fridges, freezers, cabinets, dry racks and storage areas.
  • Collaborate with team members to maintain workflow and deliver quality dishes to our guests and team members.
  • Follow California all health, safety, sanitation and food handler standards and compliance requirements.
  • Adhere to company policies and procedures in alignment with the Orange County Environmental Health standards.
  • Attend team meetings and required training sessions.
  • Complete paperwork including dishwasher logs, temperature logs, cleaning tasks and daily checklists.
  • Operate certain equipment including fruit cutters, hot-holding warmers, ovens, walk-in fridges and freezers.
  • Communicate effectively with team members, leadership and management regarding team needs and concerns.
  • Assist in maintaining inventory and reporting shortages or equipment needs.
  • Ensure food preparation areas meet health and safety standards from Orange County Environmental Health.
  • Complete any Jr. Cook job responsibilities, if necessary.
  • Support special events, promotions or themed nights as scheduled.
  • Perform other duties or special projects assigned to support business needs.
