About The Position

Big Mamma is a French group of Italian restaurants founded by Victor Lugger and Tigrane Seydoux. Over the last 10 years, they have opened 36 restaurants across Europe, the UAE, and Mexico. Their mission is to share the special atmosphere of the most beautiful traditional Italian places, creating unique moments of sharing with their customers. Due to the Group's continuous expansion, they are looking for Junior & Sous Chefs for their Berlin restaurants who will become leaders and the Chefs of tomorrow.

Responsibilities

Participate in the menu change process with the Executive Chefs, contributing to a unique culinary experience.
Ensure speed and precision at the pass.
Make sure every dish is perfect, respecting recipes and Group standards.
Act as the Chef's right-hand person in ensuring everything is impeccable: hygiene standards, well-presented staff, and controls always aligned with the objective.
Manage Food Cost like a true leader: zero waste, perfect inventories, punctual orders.
Plan, organize, and guide the brigade with energy and precision.
Train and mentor your team every day, transmitting passion and professionalism.
Build your team: your leadership creates harmony and makes the work environment stimulating and positive.
