Big Mamma is a French Italian restaurant group seeking a talented Junior Sous Chef for their Manchester location, Circolo Popolare. This role is an opportunity to become a leader and Chef of tomorrow within the group, contributing to a unique culinary experience and ensuring operational efficiency.

Requirements

  • Experience as a Junior Sous Chef or similar role.
  • Passion and professionalism.
  • Leadership skills.
  • Ability to manage food costs, including zero waste, inventories, and orders.
  • Ability to plan, organize, and lead a team.
  • Understanding of hygiene standards.

Responsibilities

  • Participate in the menu change process alongside the Executive Chefs, contributing to a unique culinary experience.
  • Ensure speed and precision at the pass.
  • Ensure every dish is perfect, adhering to the Group's recipes and standards.
  • Act as the Chef’s right hand, ensuring compliance with hygiene standards, a well-organized team, and checks aligned with objectives.
  • Manage Food Costs: zero waste, flawless inventories, and on-time orders.
  • Plan, organize, and lead the brigade with energy and precision.
  • Train and support the team daily, sharing passion and professionalism.
  • Build the team, creating harmony and a stimulating and positive workplace.
