About The Position

The Division of Developmental Disabilities is seeking to hire a Dietary Manager I for the Ludeman Developmental Center located in Park Forest, Illinois to serve as Food Services Assistant Manager, administering food service operations. Plans facility menus according to rules, regulations and special/modified diets. Coordinates food production and preparation of regular and modified diets. Services as working supervisor.

Requirements

  • Requires knowledge, skill, and mental development equivalent to the completion of four (4) years of college with courses in dietetics.
  • Requires one (1) year of professional experience in a large-scale food service program.
  • Requires possession of a Food Service Sanitation Manager Certificate (FSSMC) issued by the Illinois Department of Public Health or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).
  • This requirement is set forth in the Food Handling Regulation Enforcement Act (410 ILCS 625/3).
  • Qualifying state employees in the employee Upward Mobility Program, may complete combinations of specific proficiency tests and training program leading to a certificate of proficiency in lieu of the stated requirements for this class.

Nice To Haves

  • Two (2) years of professional experience in dietetics and food services management including nutritional values, costs and accounting for a public or private organization.
  • Two (2) years of professional experience using modern methods, materials and appliances used in large scale food preparation and service for a public or private organization.
  • Two (2) years of professional experience working with health and sanitary requirements applicable to a large-scale food service.
  • Two (2) years of professional experience planning and directing the preparation of modified diets and menus for a public or private organization.
  • Two (2) years of professional experience directing subordinates in the planning, preparing, and serving general and special diets and other food services.
  • Two (2) years of experience communicating effectively both verbally and in writing.

Responsibilities

  • Serves as Assistant Manager of Food Services of a comprehensive seven day a week food service/dietary program.
  • Serves as working supervisor.
  • Monitors staff in the implementation and maintenance of proper health, sanitation, and safety standards in food service areas.
  • Plans, guides, and directs the menu preparation and modification processes, verifying that menu variety exists to sufficiently meet the clinical needs of individuals.
  • Inspects kitchen equipment to ensure it is in good operating condition.
  • Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.
