About The Position

The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, and other items using machine and manual cleaning methods. The position also ensures the dishwashing area is kept clean, safe, and sanitary. This role operates in a kitchen environment and routinely uses sinks, dishwashers, and tools to clean kitchen appliances. Employees are frequently exposed to hot water, garbage disposals, and cleaning chemicals; hazards may also include cuts, slipping, and tripping. The position has no supervisory responsibilities and does not require travel. It regularly requires long hours and frequent weekend work. Duties and responsibilities may change at any time with or without notice.

Requirements

Ability to read and comprehend labels on chemicals.
Ability to follow directions.

Responsibilities

Sort and rinse dirty dishes, glassware, tableware, and cooking utensils, then place them in racks for the dish machine.
Sort and stack clean dishes; carry them to the cook’s line and proper storage areas, and rewash soiled dishes before delivery.
Hand-wash pots, pans, and trays using the proper wash, rinse, and sanitize method.
Remove trash and garbage to the dumpster.
Set up or break down the dishwashing area.
Clean and roll or unroll mats if applicable to the location.
Fill and empty soak tubs with cleaning and sanitizing solutions.
Sweep and mop floors.
Sweep up trash around the exterior of the restaurant and garbage dumpster.
Conduct general restaurant and restroom cleaning as directed.
Wipe up spills to keep kitchen floors dry.
Notify the Kitchen Manager whenever the dish machine wash or rinse cycle falls below safe temperature standards.
Wash hands before handling clean dishes after touching dirty dishes.
Perform other duties as directed.
