About The Position

The Lansing Center Complex is offering an exciting role for a Director of Food and Beverage! This position oversees the daily operations of the Food and Beverage Department at The Lansing Center and Groesbeck Golf Course, including concessions, mobile carts, event catering, culinary services, catering sales, menu creation, financial management, and budgeting. The Director of Food & Beverage leads and manages the entire food and beverage operation by carrying out these responsibilities either directly or through assistant supervisors. The role is responsible for marketing Food and Beverage services to clients, establishing effective operational controls, and fostering strong, positive client relationships. It ensures high‑quality product standards and presentation across all tiers of Food and Beverage operations while overseeing the daily management of departmental activities and personnel.

Requirements

  • Minimum of five years of experience in a management‑level Food & Beverage position or an equivalent combination of education and experience.
  • Prior experience overseeing comprehensive Food and Beverage operations, including sales, inventory control, cost management, and food preparation procedures.
  • Experience in food purchasing for both catering and concession environments—particularly involving price negotiation—is essential.
  • Strong knowledge of current culinary and concession trends, presentation standards, and food quality expectations is required.
  • ServSafe Food and ServSafe Alcohol certifications.
  • PCI Compliance credentials.
  • Alcohol‑awareness training and the ability to train others.
  • Strong customer‑service orientation.
  • Ability to collaborate effectively with clients and staff are essential.
  • Results‑driven individual capable of meeting budgetary goals.
  • Excellent organizational, multitasking, planning, written, and verbal communication skills.
  • Attention to detail.

  • Prior supervisory experience are critical.
  • Proficiency in Microsoft Office programs is required.

  • A certificate or degree from an accredited culinary school, college, or technical institution is preferred.
  • Experience standardizing recipes, plating, and menu costing.

Responsibilities

  • Oversees the daily operations of the Food and Beverage Department at The Lansing Center and Groesbeck Golf Course, including concessions, mobile carts, event catering, culinary services, catering sales, menu creation, financial management, and budgeting.
  • Leads and manages the entire food and beverage operation by carrying out responsibilities either directly or through assistant supervisors.
  • Markets Food and Beverage services to clients.

  • Oversees purchasing and distribution of all products to concession outlets.
  • Ensures daily compliance with Health Department regulations, alcohol service guidelines, menu engineering and development standards, and detailed costing for concession operations.
  • Hires and trains concession employees.
  • Anticipates and schedules labor needs for event and non‑event days.
  • Controls spoilage and cost of sales.
  • Inspects and tastes prepared food to maintain quality and sanitation standards.
  • Directs and coordinates all Food and Beverage units.
  • Carries out supervisory responsibilities in accordance with Legends Global policies and applicable laws, including interviewing, hiring, training, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees in conjunction with Human Resources; and addressing and resolving complaints or problems.
  • Operates with limited supervision.
  • Interacts effectively with all levels of staff, including management.
  • Works flexible hours such as nights, weekends, and holidays in addition to standard business hours.
