About The Position

The Director of F&B oversees all aspects of a hotel food and beverage program, including the hotel’s restaurant outlets. The role sets the tone for guest experiences and leads teams to deliver quality food and beverages with strong service. The Director reports to the hotel General Manager and senior Indigo Road management and attends Executive Committee meetings with ownership. The position calls for an experienced, organized restaurant leader who can manage operations and finances while fostering a respectful, collaborative, safe, and professional work environment. The Director recruits, develops, coaches, and holds team members accountable; manages budgets and labor costs; maintains service and operational standards; and ensures compliance with applicable health, safety, and alcoholic beverage regulations. The position averages 55 hours per week and requires availability for nights, weekends, and holidays. Employment is at will.

Requirements

At least five years of food and beverage management experience in a similar setting.
Must be at least 21 years of age.
Able to speak, read, and understand basic directions.
Maintain a clean and professional appearance.
Strong customer service and communication skills.
Ability to manage and develop budgets.
Comfort using a point-of-sale computer system.
Knowledge of safety, sanitation, and food-handling procedures.
Available to work nights, weekends, and holidays.
Able to communicate clearly with guests, managers, kitchen and restaurant employees, and manage a wide variety of people in a fast-paced setting.
Ability to model and act in accordance with The Indigo Road Core Values.
Ability to work an average of 55 hours per week.
Physical ability to stand and walk constantly; occasional exposure to cold, heat, and water; occasional stooping, kneeling, or crawling; occasional pushing, pulling, lifting, or carrying up to 50 pounds; and occasional climbing ladders, stairs, or ramps.
Frequent, continual, or intermittent flexing or rotation of the wrists and spine; constant reaching, turning, and precision work around the kitchen; and constant receipt of detailed oral information and spoken communication.

Nice To Haves

Some multi-unit experience is ideal.
Brand hotel experience is preferred.
Experience in both hotels and independent restaurants is strongly preferred.

Responsibilities

Oversee all aspects of the hotel food and beverage program and its restaurant outlets.
Report to the hotel General Manager and senior Indigo Road management, and attend Executive Committee meetings with ownership.
Demonstrate integrity and accountability; communicate effectively; promote collaboration; foster a positive, professional work environment; and ensure adherence to hotel operations policies, protocols, and standard operating procedures.
Motivate, coach, train, and hold team members accountable, providing feedback, rewards, and recognition.
Recruit, select, train, schedule, coach, counsel, and discipline employees; communicate job expectations and enforce Employee Handbook policies and procedures.
Adhere to and deliver the 14 elements of service with all employees.
Manage food and beverage financial objectives by forecasting requirements, preparing an annual budget, scheduling expenditures, analyzing variances, taking corrective action, and managing labor costs.
Contribute information and recommendations to strategic plans and attend weekly manager meetings.
Handle cash, bank deposits, and credit statements promptly; promptly report overages or shortfalls to the Controller.
Maintain purchase receipts and submit monthly travel and expense reports by the 30th; obtain required approvals for purchases.
Comply with alcoholic beverage commission regulations and maximize bar profitability through portion control and charge accuracy.
Maintain ambiance and presentation, including lighting, background music, linen service, glassware, dinnerware, utensils, food presentation, and service.
Establish, follow, and enforce sanitation standards and procedures; comply with Department of Health and legal regulations.
Develop and implement evacuation plans; maintain security and sprinkler systems; ensure parking lots and walkways are well maintained.
