About The Position

Serrano Country Club is seeking a Director of Food & Beverage to lead its high-volume, multi-venue operation. This is a leadership role focused on advancing an already strong department, not rebuilding it. The Club is financially healthy and has reinvested significantly in its facilities and member experience. The Food and Beverage department is a stated priority, with clear governance and strong Board and management support. This position offers a path for career growth towards General Manager and Chief Operating Officer roles, with genuine support and mentorship. The Director of Food & Beverage will have profit and loss accountability, participate in the annual budgeting process, and work with an engaged membership in a thriving club environment. The role involves leading a team of 60 or more employees across various F&B outlets, including member dining, banquets, events, and on-course service. A key aspect of this role is leveraging technology to streamline administrative tasks and enhance the member experience. The ideal candidate will be tech-forward, using tools to improve efficiency and allow staff to focus on member service.

Requirements

  • Five or more years of progressive Food and Beverage leadership, ideally including private club experience
  • Demonstrated success leading a multi-outlet operation of comparable scale and complexity
  • Strong financial acumen, including budgeting, forecasting, labor modeling, and cost of goods management
  • A genuine hospitality presence, meaning someone who is visible, knows members by name, and leads from the floor rather than the office
  • Proven ability to recruit, develop, and retain staff in a competitive labor market
  • Maturity and discretion in a member-facing environment, with the judgment to uphold Club standards while preserving relationships
  • ServSafe Manager and responsible alcohol service certification, or the ability to obtain both promptly

Nice To Haves

  • CMAA involvement and a Certified Club Manager credential or interest in pursuing one is a plus
  • The ideal candidate is genuinely tech-forward. Not simply willing to learn a new system, but the kind of leader who looks at a manual process and asks whether it needs to exist at all. Responsibilities

  • Overall leadership of all Food and Beverage operations, including member dining, banquets and Club events, golf course and on-course service, pool and seasonal outlets, and private events
  • Profit and loss accountability for the department, including forecasting, labor management, purchasing strategy, and cost controls, with active participation in the annual budgeting process alongside the General Manager, Director of Operations, and Director of Finance
  • Recruiting, training, developing, and leading a team of 60 or more, with a clear focus on service consistency and staff retention
  • Setting and reinforcing service standards through daily pre-shift meetings, ongoing training, and visible presence on the floor
  • Partnering with the Executive Chef on menu strategy, culinary standards, and cost of goods performance
  • Leading beverage and wine program strategy, including inventory discipline, vendor relationships, and member wine programming
  • Planning and executing Club events and flagship tournaments in partnership with Golf, Membership, and Communications
  • Working collaboratively with the Food and Beverage Committee and presenting to the Board and Finance Committee as requested
  • Partnering across departments with Golf, Racquets, Fitness, Membership, and Grounds to deliver one consistent member experience
  • Maintaining full compliance with health, sanitation, alcohol service, and California labor requirements
