Job SummaryThe Commissary Kitchen Production Manager oversees daily high-volume food production to support multiple locations, catering, and retail operations. This role ensures efficient operations, consistent product quality, and strict adherence to food safety standards while leading and developing the production team.

Requirements

  • Experience in high-volume food production or commissary kitchen operations
  • Strong leadership and team management skills
  • Knowledge of food safety standards and HACCP compliance
  • Experience with inventory management, purchasing, and cost control
  • Ability to manage multiple priorities in a fast-paced environment

  • Strong organizational and problem-solving skills

Responsibilities

  • Manage and oversee daily food production to meet volume, quality, and delivery requirements
  • Plan production schedules and coordinate logistics to support multiple outlets
  • Supervise, train, and schedule kitchen staff to ensure optimal performance and coverage
  • Maintain consistency in recipes, portioning, and product standards
  • Oversee inventory, purchasing, and food cost controls
  • Ensure compliance with all food safety regulations, including HACCP standards
  • Monitor kitchen efficiency and implement process improvements
  • Collaborate with leadership on production planning, menu execution, and operational needs
