About The Position

This is a full-time seasonal position at Talkeetna Alaskan Lodge, beginning in April 2027, with a starting wage of $26.00 per hour. The role oversees, instructs, and participates in preparing menu items for dining room service, banquets, and weddings. The Production Lead works closely with kitchen and service staff to deliver efficient, courteous service and meet guest expectations. The position supports banquet and wedding preparation in coordination with the Executive Chef and Events Manager, and assists Sous Chefs with back-of-house operations as needed. The job description also emphasizes safety, guest service, and care for the surrounding environment.

Requirements

Ability to work without supervision.
Ability to operate standard kitchen equipment safely.
Knowledge of proper FIFO and food-rotation procedures.
Ability to work as a team member with kitchen and service staff to ensure excellent guest service.
Must have or be able to obtain an Alaska Food Workers card.

Responsibilities

Instruct prep cooks in their duties.
Lead the prep team in daily menu-item production, maintain pars, and follow FIFO procedures.
Maintain the cleanliness and operation of the production area.
Ensure food is handled properly in accordance with health codes.
Coordinate with the Executive Chef and Events Manager to prepare and cook menu items for banquets and weddings.
Supervise menu and shift changeover.
Assist Sous Chefs with back-of-house operations as needed.
Oversee, instruct, and participate in preparing menu items for dining room service.
