About The Position

The Bakery Machine Operator will learn to operate a variety of mechanized bakery production equipment including but not limited to the mixer, divider, proofer, & oven. The operator will check and ensure product specification standards are being met as required by company authorized standards while performing the tasks in a safe and efficient manner. This role involves setting up and operating equipment, monitoring and adjusting temperature controls, operating and controlling conveyors and rollers, and recording production data. The operator is also responsible for removing and assembling equipment for cleaning, making minor machine adjustments, and reporting when major repairs are required. Additionally, the role requires adherence to current good manufacturing practices (CGMPs), performing housekeeping and maintenance tasks, and effectively communicating with supervisors and team leads.

Requirements

  • High school diploma or GED is preferred but not required
  • A combination of education, training and experience that results in demonstrated competency to perform the work may be substituted
  • Ability to work and communicate effectively in a fast-paced environment and adapt to frequent changes
  • Ability to understand and follow both written and verbal instructions with high level of detail
  • Some analytical ability required in order to gather and interpret data in situations where the problems are somewhat complex in dealing with ingredient formulations
  • Independent judgment is often required
  • Must have visual and mental ability to identify various products and read and understand instructions, gauges and thermometers
  • Must be able to perform basic arithmetic to include adding, subtracting, multiplying and dividing
  • Ability to lift 50 pounds
  • Ability to stand and/or stoop for prolonged periods of time
  • Ability to perform repetitive motions
  • Work in an environment with varying temperatures
  • Work subject to temperatures above 80-100 degrees for periods of more than one hour that is process related and more extreme in summer months
  • Work subject to noise sufficient to require hearing protection in designated areas
  • Work subject to hazards such as proximity to moving parts, electrical current, and moving objects carrying considerable weight and force
  • Capable of working in environment of flour dust
  • Work requires the ability to read, write and communicate in English in order to understand and follow work and safety instructions
  • Performs tasks requiring occasional independent knowledge in addition to procedures or specific instructions provided
  • Must be capable of understanding instructions, oral and written, and reading notices and work schedules as posted on the bulletin board

Responsibilities

  • Verify weights and order completions
  • Load and unload pans from production line
  • Load and unload oven and/or proof box
  • Monitor for foreign material at all times
  • Ensure proper placement of product in trays
  • Remove dough from conveyor belts that do not meet specifications
  • Report and take necessary action to prevent food safety and food quality problems
  • Follow and enforce procedures outlined in the Food Safety Plan, Food Quality Plan, and other programs supporting the SQF System and other 3rd party audits
  • Perform quality assurance checks; taking temperatures and weight of dough, recording results on documentation records and accounting for all materials used on the line for assigned shift
  • Effectively communicate as required with supervisor or bakery team lead
  • Adhere to all CGMP’s (Current Good Manufacturing Practices), such as good hand washing practices and adhering to the employee hygiene plan
  • Perform housekeeping and maintenance tasks to keep the production area clean, organized and safe
  • Ensure that the necessary tools, settings, and supplies are ready prior to production
  • Monitor and adjust the temperature controls of the oven and proof room
  • Operate and control and perform adjustments on conveyors and rollers
  • Record information such as down time, waste, order completions, package verification, quality assurance checks, finish product scoring etc.
  • Remove and assemble equipment for cleaning
  • Make minor machine adjustments and inform the supervisor and the maintenance department when major repairs are required
