About The Position

Requirements

  • A minimum of 1 year experience as a baker working with quick breads, starters, laminated doughs, enriched doughs, and bread
  • Previous experience mixing dough, scaling product, lamination, shaping, proofing and baking
  • Experience in a high-volume bakery, hotel experience highly preferred!
  • Working knowledge of baking equipment (large scale mixers, proofers, scales, sheeters etc)
  • The ability to read and follow written recipes
  • Open availability, previous experience working bakers (overnight) hours

Responsibilities

  • Prepares and bakes all breakfast pastries, breads, rolls and some desserts for restaurants and banquets.
  • Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration.
  • Ensures spoilage and waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
  • Prepare food items according to standard recipes and as specified, to ensure consistency of product.
  • Prepares cookies, pies, dough and other basic items as instructed.
  • Performs all prep work for cakes, pies, mousses, plated desserts, fills danish, organizes and cleans walk-in coolers and freezers.
  • Stores all food products in walk-in coolers/freezers and dry storage, including covering, labeling, dating and proper rotation.
  • Checks expiration dates, especially in highly perishable food items.
  • Performs general/routine cleaning tasks using standard hotel cleaning products as assigned by your supervisor, to adhere to food safety and sanitation standards.
  • Performs HACCP monitoring of temperatures (hot and cold holding, and refrigeration equipment) and maintains good food safety and sanitation standards, proper use of sanitizing solution.
