The Assistant Production Manager is responsible for baking breads according to Izzio’s standards and recipes, managing operations to ensure product and employee safety, troubleshooting production issues, and communicating adjustments. This role requires critical thinking to solve everyday and complex problems using logic and reasoning.

Requirements

  • High school diploma.
  • Relevant studies in Culinary arts or Food Science and/or a minimum of three (3) years of experience in artisan baking.
  • A minimum of six (6) years of experience in a food manufacturing environment.
  • A minimum of three (3) years of experience managing teams of 50 or more people.
  • A passion for bread and a positive attitude.
  • A well-developed understanding of the artisan baking process and the ability to apply that knowledge to help the team bake breads to the Izzio Standard.
  • Well-developed manual dexterity and fine motor skills for artisan bread production.
  • Strong organizational skills.
  • Strong math and writing skills.
  • Experienced with Microsoft Office Suite: Word, Excel, PowerPoint, and Outlook.
  • Ability to thrive in a constantly changing environment.
  • Maintain regular, consistent attendance & punctuality.
  • Must have a flexible schedule including nights, weekends and holidays.
  • Ability to communicate clearly with others while maintaining a positive working environment.
  • Responsible and accountable for documenting production variables utilizing standards set by the Head baker and / or Production Managers.

Responsibilities

  • Manage existing production standards and methods, focusing on quality and yield, including specifications for standards, weights, bake times, and production control processes.
  • Monitor production output and ensure compliance with the production schedule.
  • Maintain a presence on the production floor to support Supervisors and Line Leads, analyzing and resolving work problems or assisting workers.
  • Recommend measures to improve production methods, equipment performance, and product quality; suggest changes to work conditions and equipment use to increase efficiency and/or improve safety.
  • Prepare and maintain accurate production reports and records.
  • Oversee start-up and line checks, including equipment condition and temperature settings.
  • Monitor product quality, report issues, make formula changes as directed, and track these changes.
  • Assist in implementing systems for efficient bread production, emphasizing hands-on training and measurable results.
  • Coordinate with the Quality Department to ensure compliance with uniform product standards.
  • Coordinate with Sanitation to ensure plants and equipment meet regulatory cleanliness and product safety requirements.
  • Supervise and train employees on Production SOPs, GMP, HACCP, and Safety/COVID-19 guidelines.
  • Optimize employee performance through coaching and positive reinforcement.
  • Conduct regular shift meetings to discuss work-related topics.
  • Manage and report on RedZone.
  • Perform other duties as assigned.
