About The Position

Palmetto Bluff is an award-winning 20,000-acre development located along the May River in the Lowcountry of South Carolina. It features a private member's club with a marina, restaurants, equestrian center, shooting club, golf courses, lawn and racquet club, and a community farm. The development also includes a nature preserve, walking trails, retail shopping, an art gallery, and a vibrant village that honors the region's heritage. The Assistant Food & Beverage Manager is responsible for upholding service standards and managing the day-to-day operations of the restaurant. This role involves directing front-of-the-house staff to ensure efficient service and drive sales, conducting pre-shift meetings, and engaging with guests and members to provide personalized service. The position requires active participation in all service operations, including presenting menus, taking orders, managing reservations, serving food and beverages, greeting and seating guests, and maintaining related records. The role also involves cross-training and supporting other Club Restaurants and Banquet/Catering operations as needed.

Requirements

  • High school graduate.
  • Minimum 21 years of age to serve alcoholic beverages.
  • Two years of related hands-on experience.
  • Excellent telephone etiquette.
  • Strong knowledge of MS Office, including Word, Excel, PowerPoint, and Outlook.
  • Knowledgeable of POS system to program specials and ensure database integrity.
  • P.O.S. and manual system procedures.

  • Experience in a resort and/or club environment is beneficial.

Responsibilities

  • Provides the highest quality service and product to satisfy both members and guests.
  • Actively participates in the restaurant operation providing continuous direction to staff and ensuring maximum member/guest interaction.
  • Communicates to all front-of-house and back-of-house staff all pertinent information, including special events, policies and guidelines, human resource topics, and other related topics.
  • Assures scheduled staff is present, knowledgeable of that day's duties, and performing their duties in accordance with established standards.
  • Ensures equitable, timely, and complete opening and closing duties are accomplished.
  • Supervises and maintains service standards and adherence to Palmetto Bluff Club Standards.
  • Ensures shift-closing paperwork is timely, complete, and processed according to policy.
  • Assist with the submittal of the weekly variable pay worksheets and gratuity distribution administration.
  • Ensures the facility, equipment, and surrounding areas are well-maintained and clean.
  • Continually provides member menu feedback to the culinary department.
  • Assist the Restaurant Manager with payroll and labor controls to achieve budgeted goals.
  • Maintains a daily operations log, including cover counts, staff levels, service issues, and other relevant topics for future reference.
  • Oversee the ordering and maintaining par levels for beverages and other inventory.
  • Attends weekly Food and Beverage meeting and other special event meetings.
  • Maintain complete knowledge of all menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices.
  • Maintain complete knowledge of restaurant and bar layout, table/seat/station numbers, restaurant reservation process, proper table set-ups, room capacity, hours of operation, price range and dress code.
  • Be knowledgeable in all Palmetto Bluff Club BEOs.
  • Understand the characteristics and description of every wine/champagne by the glass and major wines on the wine list.
  • Maintain designated china, flatware, and glassware for drinks.
