About The Position

The Assistant Director of Food and Beverage will be responsible for overseeing all dining outlets, banquets, and managing all aspects of staff training and service. This role requires maintaining a high standard of quality with regard to guest and employee satisfaction, and meeting the objectives and standards set forth by the Chatham Bars Inn Service Standards, including Forbes Five-Star Standards, Preferred Legend, and AAA. The position involves ensuring proper and successful staff training, including behavioral training and steps of service. Responsibilities also include hiring, coaching, counseling, disciplining, conducting performance reviews, and managing terminations. The Assistant Director will oversee staff during operations, maintain a presence in dining rooms, handle guest complaints, and contribute to achieving F&B revenue goals. This role works closely with the Director of Food and Beverage to increase F&B guest count and total revenue while maintaining service quality. Additionally, the position involves reviewing staffing needs for efficient labor cost management, ensuring accountability for operating systems like requisitions and inventory, executing accounting functions, and creating weekly schedules for all F&B outlets.

Requirements

  • Minimum of 3 years supervisory/management experience
  • Minimum of 2 years dining room management
  • Experience in a 4 or 5 Star/Diamond property strongly preferred
  • College education or equivalent, hotel or restaurant management degree preferred
  • Demonstrated training experience
  • Superior customer service skills
  • Must be able to stand for long periods of time
  • Ability to multi-task
  • Strong attention to detail and organization
  • Basic computer skills required. Experience with Excel, Outlook, Micros, Open Table, and Delphi preferred
  • Clear and concise written and verbal communication skills
  • Enjoys a fast-paced work environment
  • Ability to work weekends and holidays
  • Must be able to lift up to 40 lbs
  • Current TIPS Alcohol Certification or comparable alcohol service certification

Responsibilities

  • Ensure proper, consistent, and successful staff training to include behavioral training, steps of service, and company-wide knowledge training
  • Responsible for hiring, coaching, counseling, disciplining, performance reviews, and terminations
  • Oversees the staff during operations
  • Maintaining presence in the dining rooms and handles guest complaints
  • Contribute to the achievement of F&B revenue goals
  • Work closely with the Director of Food and Beverage to strive to increase F&B guest count and total revenue, while maintaining quality of service
  • Review staffing needs daily and weekly for efficient management of labor cost
  • Ensure accountability for successful execution of all operating systems (requisitions, weekly and daily inventory) that impact the efficiency of the operation
  • Ensure proper execution of all accounting functions (proper guest check procedures, comp and void procedures, and proper event check posting)
  • Weekly scheduling of all F&B outlets
