About The Position

The Assistant Bakery Manager supports the Bakery Department Manager in leading department operations and associates. The role helps deliver high-quality bakery products and customer experiences while supporting sales, freshness, presentation, and overall store success. It combines bakery craftsmanship with operational responsibilities, including production planning, merchandising, labor and inventory management, food safety, and team development. The Assistant Bakery Manager also performs department duties as needed and assumes responsibility for department operations when the Bakery Manager is absent.

• Knowledge of baking, decorating, proofing, and production-planning techniques.
• Knowledge of food safety standards, temperature controls, allergen handling, and sanitation procedures.
• Knowledge of retail bakery operations and high-volume production environments.
• Ability to review sales, labor, and production data to inform department planning.
• Ability to train, coach, and develop associates at various skill levels.
• Ability to lift up to 50 lbs. and work in hot and cold temperature environments.
• Flexible availability, including early mornings, evenings, weekends, and holidays; reliable attendance; and compliance with company safety policies and Code of Business Conduct.

Responsibilities

• Assist in overseeing daily Bakery Department operations and maintaining standards for quality, freshness, presentation, and customer service.
• Create a welcoming, customer-focused environment; resolve customer concerns and manage special orders.
• Help plan and execute daily bakery production based on sales trends and seasonal demand.
• Execute merchandising plans, promotions, planograms, and seasonal programs.
• Assist with managing department sales, labor, scheduling, ordering, inventory, and shrink goals.
• Support compliance with food safety, sanitation, and regulatory requirements.
• Assist with hiring, training, coaching, and developing bakery associates, promoting teamwork and accountability.
• Perform Bakery Department duties as needed and assume responsibility for department operations in the Bakery Manager’s absence.
