About The Position

The Production Clerk at dnata Catering plays a critical role in supporting the efficient operation of the aviation catering production line. This position is responsible for ensuring that all Critical Control Points (CCPs) within the production department are completed accurately, consistently, and on time. Working in a fast-paced environment, the Production Clerk collaborates closely with production and quality teams to monitor CCP compliance, support HACCP standards, and maintain a clean, organized, and safe production area.

Requirements

  • High school diploma or GED with 2+ years’ experience in a high-volume food service with at least 1 year experience in food service and production.
  • Working knowledge of HACCP principles and food safety standards.
  • Strong attention to detail and ability to remain highly organized.
  • Ability to manage a heavy workload and meet tight deadlines.
  • Demonstrated ability to accurately monitor and control product wastage.
  • Flexibility to work various shifts, including nights, weekends, and holidays.
  • Ability to work independently as well as collaboratively within a team environment.
  • Strong prioritization and multitasking skills.
  • While performing the essential functions of this job, the employee is continuously asked to multi-task under time limits.
  • Position requires constant attention to precise details and accuracy of specified standards including following simple to complex (more than 3 steps) instructions, and concentration which frequently extends beyond 30 minutes at a time.
  • This position also requires constant attendance and punctuality - Is consistently at work and on time.
  • Follows instructions, responds to management direction; Takes responsibility for own actions; Completes tasks on time or notifies appropriate person with an alternate plan.

Responsibilities

  • Support and comply with the current HACCP program in both hot and cold kitchen operations.
  • Monitor and ensure completion and accuracy of CCP logs in the Hot/Cold Kitchen.
  • Verify that all hot kitchen coolers are operating in accordance with HACCP plan requirements.
  • Ensure proper cooling processes are followed for all cooked food items.
  • Confirm that final cooking temperatures meet established food safety standards for all dishes.
  • Ensure products removed from hot kitchen holding coolers follow established SOPs.
  • Assist with waste segregation and processing of expired products.
  • Maintain full understanding of knife log procedures and applicable SOPs.
  • Ensure that all production labels are properly identified and color-coded.
  • Support all Quality Assurance (QA) processes in the Hot/Cold Kitchen.
  • Perform additional duties assigned by management.
