Requirements

  • High school diploma or general education degree (GED); or one to three months one year related experience and/or training; or equivalent combination of education and experience.
  • Prior Asian Wok or Asian culinary experience required.
  • Ability to read a limited number of two- and three-syllable words and to recognize similarities and differences between words and between series of numbers.
  • Ability to print and speak simple sentences.
  • Ability to add and subtract two digit numbers and to multiply and divide with 10's and 100's.
  • Ability to perform these operations using units of American money and weight measurement, volume, and distance.
  • ServSafe Certified
  • Prior Asian cooking experience required

Responsibilities

  • Utilize all Wok Station equipment and other kitchen equipment to an advanced level.
  • Maintain a thorough working knowledge of and ability to execute Asian cooking styles and techniques, including wok station and stir-fry.
  • Ensure Asian product, taste, and presentation exceed customer expectations and Food & Beverage standards.
  • Assist with Sushi station as needed.
  • Assist in the preparation of a la carte and buffet food items.
  • Assist cooks and Sous Chefs as directed.
  • Adhere to proper cleanliness and sanitation standards as set forth by ServSafe.
  • Adhere to proper time/temperature controls.
  • Properly cover, label, and date any/all food products before storage.
  • Conduct proper FIFO procedures when stocking/replenishing coolers, freezers, and/or dry storage areas.
  • Accurately cool hot food products to proper temperatures within appropriate time frames before storage.
  • Reheat cold foods to proper temperature within appropriate time frames before service.
  • Accurately monitor hot food holding temperature logs and document corrective actions taken when temperatures do not meet standards.
  • Understand and follow production logs and quantities precisely.
  • Initiate a positive guest experience when working any front buffet line station or in public contact by providing a welcome/greeting, making eye contact, describing food offerings, smiling, and bidding a warm farewell and good luck.
  • Safely and correctly operate basic kitchen cooking equipment.
  • Thoroughly clean work station and equipment prior to end of shift.
