About The Position

Responsible for the preparation of all proteins, vegetables, sauces and side items required for the sushi bar. This is a tipped position. Regular attendance in conformance with the standards, which may be established by the Hotel from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action up to and including termination. Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel. Upon employment, all employees are required to fully comply with the hotel rules and regulations for the safe and efficient operation of the facility.

Requirements

  • Ability to satisfactorily communicate in English (speak, read, write) with guests, co-workers and management
  • Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum amount of supervision.
  • Ability to accurately follow established recipe and technique guidelines
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
  • Ability to work well under pressure and handle multiple tasks at once.
  • Ability to be well organized, maintain concentration, and think clearly while providing service to many guests at any given time.
  • Punctuality and regular and reliable attendance.
  • Interpersonal skills and the ability to work well with co-workers and the public.
  • Must possess a valid Food Handler Card

Nice To Haves

  • Previous Sushi Prep Cook experience is preferred, though any combination of education and experience that provides the required knowledge, skill and ability will also be considered.

Responsibilities

  • Reviews prep list daily and completes all prep required according to sushi bar specifications provided by the Executive Sushi Chef
  • Ensures sushi bar stations, prep area, and refrigerators are kept clean and organized at all times
  • Oversees first in/first out process to ensure items are utilized before their expiration date
  • Receives, inspects, and puts away all sushi bar items when they are received
  • Prepares sushi rice according to recipe guidelines
