About The Position

The Good Eating Company is seeking a Sushi Chef for our client in Mountain View, California. In the sushi chef role, you will be responsible for preparing different types of sushi such as nigiri, Poke bowels and maki rolls. You will also manage the ingredients handling and preparation. It is crucial that you maintain a deep understanding of which ingredients taste well together. We are obsessed with local products, scratch cooking, fresh ingredients, great food and being best in class. Requirements

  • Expert sushi craftsmanship with strong skills in nigiri, maki, poke bowls, and contemporary sushi preparation
  • Deep ingredient knowledge and an intuitive understanding of flavor balance, texture, and pairing
  • Commitment to scratch cooking using fresh, local, high‑quality ingredients to create exceptional guest experiences
  • Strong culinary leadership with the ability to mentor, collaborate, and elevate team performance
  • High standards of excellence in food safety, presentation, consistency, and craft
  • Team‑first mindset rooted in hospitality, communication, and a passion for delivering best‑in‑class food every day
  • Associate's Degree or equivalent experience
  • 2 years minimum management experience
  • 2 years minimum functional experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.

Responsibilities

  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment to prevent food contamination
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met
  • Adhere to traditional Japanese sushi-making methods and techniques
