About The Position

This role is responsible for maintaining a high level of sanitation and cleanliness within the kitchen and food serving areas. The Steward Heavy Duty will perform a variety of cleaning tasks to ensure all equipment, surfaces, and areas meet health department and company standards. This includes degreasing, cleaning, and polishing kitchen equipment, walls, floors, and serving areas. The position also involves dishwashing, stocking supplies, waste removal, and adhering to all company policies and procedures, including the Everyone Greets Everyone (EGE) policy and mandatory meetings. The role requires flexibility in scheduling, including nights, weekends, and overtime as needed.

Requirements

  • Six months previous kitchen worker experience is required.
  • Must be able to work any day of the week and any shift.
  • Must be able to get along with co-workers and work as a team.
  • Must present a well-groomed appearance.
  • Must be able to work inside and maneuver throughout the kitchen areas, sometimes in small spaces.
  • Must be able to tolerate hot temperatures in excess of 100 degrees near dishwashing machine.
  • Must be able to wear kitchen protective gloves for entire shift.
  • Must be able to lift up to 100 lbs.
  • Must be able to push and pull carts weighing up to 200lbs.
  • Must be able to stoop, bend, kneel, crouch, reach, push and pull while performing kitchen duties.
  • Must be able to move heavy wheeled appliances.
  • Must be able to stack racks of dishes and silverware.
  • Must be able to respond to visual and aural cues.
  • Must be able to use the cleaning equipment/chemicals including but not limited to floor scrubbers, vacuums, blowers, degreaser, multi-purpose, enzymes, etc.
  • Must be able to operate all kitchen equipment and machinery.
  • Must be able to work in areas containing secondhand smoke, dust, loud noises and bright lights.

Responsibilities

  • Degrease, clean, and polish kitchen hoods, walls, doors, pipes, and refrigerators.
  • Clean grease buildup behind all equipment.
  • Clean and polish tables, counters, shelves, steam tables, and hand sinks.
  • Clean and degrease grills, stoves, fryers, broilers, burners, ovens, filters, flat tops, and all prep areas.
  • Clean air vents, ventilation hoods, ice machines, and air conditioning registers.
  • Clean and degrease all rubber matting.
  • Remove all garbage, wash trash cans, and replace liners.
  • Sweep floors to remove gum or substances.
  • Soak floors with degreaser and use a floor cleaning machine to scrub kitchen floors.
  • Clean drains and pour enzyme into drains.
  • Clean food serving areas including counters, floors, food trays, food carts, and kitchen equipment.
  • Wash and sanitize dishes, including china, plates, flatware, utensils, pots, and pans, by hand or using dishwasher machinery.
  • Clean and stock supplies such as plates, utensils, pots, pans, and other kitchen utensil items.
  • Replenish all non-food items as needed.
  • Lift bus tubs to bus carts and push carts to the kitchen.
  • Remove trash from kitchen areas and place it in the dumpster.
  • Break down empty boxes from kitchen areas and place them in the dumpster.
  • Maintain the proper level of sanitation in accordance with Health Department and Stewarding standards in all kitchen outlets.
  • Clean and sanitize all kitchen equipment in a safe manner.
  • Meet attendance guidelines and adhere to regulatory, departmental, and company policies.
  • Work a varied schedule including holidays, nights, and weekends as needed.
  • Work a reasonable amount of overtime when required.
  • Follow the Everyone Greets Everyone (EGE) policy, acknowledging guests and team members, initiating greetings, and maintaining a positive on-stage presence.
  • Participate in all mandatory meetings and pre-shift BUZZ sessions.
  • Perform other duties as assigned.
